Recipe: Broccoli Salad
I have made this recipe on different occasions for years, and most recently at our family BBQ this past weekend. My cousin kept saying how much she liked it, so I thought its a great time to post the recipe. I took it to a neighborhood BBQ a few years back and out of all the salads, mine was the only one to be fully eaten and fast too!! Its a nice, quick, crunchy perfect for summer salad that everyone can enjoy!
- 5 – 6 cups chopped broccoli (I’m not sure of the measurements I use. The last couple times I made this I actually bought the bagged, pre-cut stuff and just cut it into smaller pieces. thanks Stacey!!!)
- 1/4-1/2 cup chopped red onion*
- 1/2 cup bacon bits*
- 1/2 cup sunflower seeds*
- 1/2-3/4 cup craisins (the original recipe I had called for raisins but I don’t like them so I use craisins)*
- 1 cup mayonnaise
- 1/4 cup sugar
- 2 Tbsp Red Wine Vinegar
- salt and pepper to taste (I like to use a LOT of pepper)
*To be honest, I never measure any of mine. I add my broccoli to the bowl then mix the other stuff until it looks like just the right amount to me!
When I make this I make some of it the night before, I just find the broccoli can absorb some of the flavor of the dressing that way. So I mix the dressing ingredients, and in another bowl I mix together the chopped broccoli and red onions. To the broccoli and onions I add the dressing and toss until it is all coated. The next day, right before I’m about to serve it so they don’t get soggy, I add the rest of the salad ingredients. Its so fast to make, and worth the 10 minutes of effort you put into chopping (I HATE chopping!)
